Essay
Hi my name is Denise B-S I am a Canadian living in British Columbia, Canada I was born in a city called Vancouver.
My favorite dinners are Roast Beef (with potatoes), Spaghetti (with salad), Steak (with potatoes) and Stew (with rice). My favourite part of the meal is dessert. I enjoy Chocolate Cake, Apple crumble and most of all Strawberry Delight ummmm!!! I really love the fresh strawberries on the top. Strawberries grow here in British Colombia when the weather is warm. We also import them from California. My mom and I enjoy making Strawberry Delight at Christmas and on our birthdays. I like to make Strawberry Delight because I get to spend more time with my mom and because I can lick the bowl. Also because when I grow up I want to be able to make Strawberry Delight for my children and family. Strawberry Delight is the best dessert I have ever had (and I have tried many other desserts). I love making words and designs with strawberries and whipped cream (example HAPPY BIRTHDAY). Next year I am going to make Strawberry Delight for my birthday!! I like to save some crust till the end because it is my favourite part. Another thing I like about Strawberry Delight is that is cold unlike other cakes. We (my mom and I) like to hide the Strawberry Delight in the fridge and see my dad and brothers faces when we pull it out. Something that makes our Strawberry Delight special is that we make Strawberry Delight different to those served at restaurants (I like our way much better). I also have lots of memories, of when my mom and I used to make Strawberry Delight when I was little. I loved it when we got to use our hands for the crust. Sometimes if we don't eat the whole cake in one night I get leftovers in my lunch for school. I love to make and eat Strawberry Delight because it is so much fun!!! That is why I want you to try this recipe at home with your family and share memories like I have.

This dish doesn't really have a special history to our family, but then it kind of does, because my mom likes to cook and experiment, and that's how "Mom's Chicken" came to be invented. I also don't have any stories to go with this dish besides the fact that it is SO SO SO good. None of my other family knows about it, just my mom and me and that's because my dad lives somewhere else just like the rest of my family. It is special to me just for the same reason as my mom. I like her cooking, although it depends on what she happens to cook up. I hope that the people who read this get a chance to some day cooking of this delicious dish and try it for themselves. I also hope that they will love it just like my mom and I do.
If you want to, you can name it whatever you want, because as you know my mom made it up.

Pizza buns
Recipe
You will need: pan, tomato sauce, (not paste) cheese, and hot dog buns. Step one: turn the oven on broil at 450 degrees, and put the pan into it. Step two: get out your hot dog buns and put them in the oven until they are a little brown. And take them out. Step three: put tomato sauce on the buns, and then put cheese on them. Step four: Put the pizza buns with all the tomato sauce and cheese on the pan in the oven. Then take them pizza buns out, and... ENJOY!!!!!!!!!
Essay
My name is Luke and I like to eat these pizza buns when I get home from school for a snack. I think that it makes a great snack because when I get home from school I am hungry. And it is pretty filling so I dont need to eat again until dinnertime. It is a very easy, and fun snack to make. But dont play around with the oven. You can also put it in the microwave. I really think though, that the oven is a much better way to cook them, because the microwave makes me have a bad feeling, a kind of tangy feeling. My two sisters and one brother also eat these yummy snacks when they get home from school. The pizza buns dont make much mess. So I can eat them anywhere. I hope that you like my recipe, and I know that I will like yours.

Egg 1
Worcstershire sauce
2 or 3 Chopped onion
Garlic 1 teaspoon
Parsley
Parmesan cheese 1 cup
Salt 1 teaspoon
Pepper to taste
Essay
My name is Kit.B. I am from Whistler B.C. Canada. My essay is on meatballs. We have meatballs when we have spaghetti. Meatballs are my fifth favorite food. Meatballs aren't special to me they're just good. Meatballs taste good with tomato sauce. We have huge meatballs and then tiny meatballs. I like the huge ones best. WE usually have meatballs and spaghetti with salad. Only my dad and my sister and I eat meatballs - my mom doesn't. Ground beef comes from cows. Meatballs are really fun to make because I like to mix every thing together. It feels really cool. Smaller meatballs cook faster because there's less meat to cook. You can make meatballs with any kind of ground beef. I like spicy and normal ground beef mixed together. I like the meatballs best when theyre straight out of the oven. I like to cut my meatballs up in to tiny little bits when I have the huge meatballs. I like to cut the medium sized ones in half and then eat them whole. I always have at least 5 meatballs every time. Only my dad and I make meatballs in our family. Hopefully every body tries meatballs because they're very yummy. The reason meatballs are my fifth favorite food because they're so good but I don't always feel like them. To make the meatballs put every thing in a bowl then mix it all up till its all together then roll them into balls and put them on a cookie sheet and bake them for 20 minutes. My family likes meatballs because they taste so good. And they love spaghetti. So do I. Meatballs taste even better with tomato? I hope you make meatballs and learned about them too.

Poutine
Recipe
French fries (potatoes that are cut into slices and fried in deep oil) When these are cooked you serve them with gravy and cheese.
Essay
Hi my name is Mike. I live in Canada in a place called Whistler. And I am doing my essay on Poutine. Poutine is from a place in Canada called Quebec. My mom always makes Poutine. It is very easy to make and it tastes very good. It is very popular where I live. You can buy it at any restaurants. But I usually have it when I go up the mountain skiing. You do not know what skiing is. So I will tell you. You go down a mountain with snow on it on two pieces of wood. It is a lot of fun. Whistler is known all over the world for its skiing and snowboarding. We have a lot of snow usually but this year we have had almost none. So all the skiers and snowboarders are very angry because we have had only one big snowfall. And we have only 230 cm of snow up the mountain so that is bad for skiing.

Preparation Time is 30 minutes. Cook for 2 hours.
Essay
My name is Christiana D. I am 11 years old. I live in Whistler, B.C. Canada. I chose Gulyas for my recipe, as it is one of my favorite dishes. We usually have it when we go up to Williams Lake, B.C. Canada. It is a very popular dish in Austria (my background) but originates in Hungary. Hungary and Austria (and many different European countries) used to be one big empire. Austria's cuisine is made up of many different European countries. There are many different kinds of Gulyas around the world. Gulyas is best served with spaetzle, knoedel, or polenta. Hungarian people use lots of paprika. Paprika is prepared from red peppers. Gula is a herd of cattle that lives in the open during the summer. Puszta (steppe) is much like our prairies. This is where the Gula live. Gulyas is the main dish of the Gula herdsmen. Like our cowboys make cowboy hash, the Gula herdsmen make Gulyas. It is easily made in a big kettle over a campfire. Hungarians are great connoisseurs of paprika. Paprika can be in many different degrees. I go to Williams Lake to visit my Grossmami (one of the German ways to say grandma). My Grossmami used to live in Austria. One of the things she learned when she studied Hotel Management was how to prepare all of the important Austrian dishes. Gulyas is one of them. One of the nice things about having it is that we basically only have it when we go to Williams Lake. On the odd occasion my mom makes it. Sometimes I am looking forward to going to Williams Lake to have all the different kinds of food that they eat in Austria.I hope you enjoy my recipe for I am very excited to try yours.

CREPES
Recipe
Put in a basin half a pound of flour. Make a hole in the middle of the heap. Add a pinch of salt, a little sugar, three eggs one after the other, and a glass of rum or brandy and mix well, Add warm water little by little till it is very smooth. Let it rest for about 3 hours. Then add a glass of fresh cream. Mix well; it should have a consistency of cream. Put in a frying pan a very small piece of butter. When it is getting brown quickly put in a tablespoon of batter. Move the pan so it covers the bottom (it should be very thin) and cook on a quick fire, tossing once.
Essay
We make crepes on special occasions including birthdays and when we have special guests like my uncle, aunts, cousins and grandparents. I have French heritage. It is perfect because crepes are French too. I mostly have crêpes at my home in Whistler. I also have Dutch heritage, one of my favorite Dutch foods are croquets they are very thick beef gravy coated in breadcrumbs. I mostly have croquets at my Ouma's house. Another one of my favorite foods is roast beef. Roast beef is a large piece of beef roasted in an oven coated in saltpeter and garlic. This is an English food so it falls into my heritage as well because Im part English. Roast beef I mostly have at my nanas. One of my all time favorites is Yorkshire pudding. Yorkshire puddings are like an air filled biscuit. This is also English so it is a native food to me as well. Over all I think my Mom makes the best crepes, croquets, roast beef and Yorkshire pudding. I also think my dad is good at making Kraft Dinner. Too bad this is the only thing he makes but his Kraft Dinner is the best in the whole wide world. Sometime he puts in little cocktail wiener things. One other thing he makes is coffee and tea. The weirdest thing in the history of food is green ketchup. I wonder who in their right mind would want to make green ketchup but if it makes money why not. Another thing like that is purple nacho chips. I think they taste exactly like normal nacho chips but the color is a bit off putting. I hoped you liked reading my essay and I hope you learned something about my family.

Essay
Hey my name is Jenny H. I have chosen my recipe on Chili because it is one of My favorite foods. I dont really have a reason why it became a part of my life, but all I know is, my dad makes it and it's really good. My sister and I really like it. Dad learnt the recipe from his dad and he learnt that recipe from his dad and on it goes. Along the way it has changed just a little bit. I hope I will teach this special recipe to my kids and then they will teach it to their kids so we will keep the chain.
There are quite a few ways you can eat it so here they are: 1) Bread bowl, this is a round loaf with all the bread scooped out leaving the crust, which is then filled with chili. 2) Just in a regular bowl or even a cup. The person in my family that likes chili the most is my Granny, she says 'I dont like any other chili then the old family recipe' she will not eat a Store bought chili even though it is the best in town. I agree with her but I like it store bought but better at home when Dad makes it. In Texas they have a chili cooking contest that you have hundreds of people that cook chili and the judges test all the chili dishes and pick the best one, one year a chili. Dish with no beans won! So I guess you dont need beans for chili. Two of the ingredients in the winning chili dish were, Milwaukee beer and Tequila! Mexicans eat chili to stay cool, when you eat chili you sweat and when the sweat evaporates it makes you cool! I dont know the recipe off by heart yet and I dont even know what half the stuff is but all I know is I love it the way it is!

Pyrohys are my most favorite Ukrainian food, my second favorite is ghoulash. Everyone in my family likes pyrohys and goulash except for my brother. I dont know why my brother dislikes them but I'm sure he will learn to like them someday, anyway my mom's recipe is old, very old, and the only thing I don't like about it is.... ONIONS! Whenever my mom puts onions in the pyrohys they are uneatable! [At least for my brother and me] well my mom only puts onions when adults are over but I usually sneak over to take a bite. Last Christmas is when I found that out! Anyway if you like this recipe and would like to try it out that's great! I would like to hear about someone who likes my moms recipe and she would be happy to hear that to! I hope I get to write more recipes and learn more about how other people are!

6-8 servings
You will need:
3-4 cups of cubed bread
(O.K. if stale or frozen)
3 eggs
3 cups of milk
1/2 cup of sugar
1/2 tsp. vanilla extract
Recipe
1) Preheat the oven to 350 degrees F. Have ready a 9X13 inch baking pan.2) Spread the bread in the pan. 3) Beat together the other ingredients pour the mixture over the bread. 4) Bake for thirty-five minutes. Variations: Bread and chocolate pudding. Along with bread add 2 cups choc. Chips.
Essay
I think Bread and Butter Pudding is delicious. It is a great dessert because it is nutritional and sweet. It is a great way to use up bread crusts and stale or frozen bread. This dish goes well with ice cream but is just as good plain. If you want to put a topping on take the bread and butter pudding out about half way through the cooking time and add the toppings (nutmeg, cinnamon etc.) then replace the pan into the oven. Bread and butter pudding is originally from England and has moved over to Ireland and other countries. A lot of effort is needed to make bread and butter pudding but the result is tasty. Although you may want to cut small pieces it's hard to resist seconds. The first time I tried bread and butter pudding I held my nose and I thought it was going to be horribly disgusting. Imagine bread soaked in eggs and milk covered with sugar and toasted with butter on it. This does not sound very appetizing but this is not what it is like. It has the texture of Lasagna, the sweetness of a mild cake and the taste that mere words can't describe. It is wonderfully great. I hope you will have the opportunity to try this amazing recipe. Whether it's good or not you'll have to decide for yourself. Bon Appetite!!

1 pound of butter
Recipe
Mix-till dough

Essay
Hi my name is Angelina and my favorite foods are pizza, tomato soup, ice cream and Pizza Dolce, which is the one I chose. Pizza Dolce is an Italian dessert, which my grandmother makes on special occasions. My grandmother was the only one who knew how to make Pizza Dolce and now I do and I will pass it on to my kids and they will pass it onto their kids and so on. Pizza Dolce is a really nice dessert to have at parties and special occasions. On my mother's side my grandmother is Croatian and my grandfather was Italian. When my maternal grandmother got married to my grandfather she learned the Italian ways and how to cook Italian food, she also got the influence by living in Italy so she got first hand experience. When she moved to Canada she took with her, her Italian and Croatian cooking ways, which she still uses now. The Pizza Dolce is like a pizza because of its shape. The dough is sweet dough shaped roundly, and then spread a nice marmalade, jam, or jelly combination. The marmalade, jelly, jam combination can be any flavor according to the taste of the people who are making it and or eating it. Over the marmalade, jelly, jam combination place more dough over top of it in a criss-cross topping leaving the marmalade, jelly, and jam combination through the dough. Baking the Pizza Dolce is easy- put it in the oven for a certain amount of time. When it is ready it tastes like a pie, not too sweet, just perfectly tasty. You can find this Italian food in fine restaurants in Italy, or families having the recipe and cooking it correctly. This Pizza Dolce recipe has been in this family since my grandmother Nona found it, and through the years it will travel down the line as a long lasting family recipe as we will teach it to our children's children. For ever more will we remember where the Pizza Dolce originated from and how to make it, thanks to my mother's mother, from Croatia, who learned the secrets of making a good Pizza Dolce in Italy.

Danish Christmas Rice Pudding
Ingredients
1/2-cup short grain rice
750 ml milk
1/2 tsp salt
1/4-cup sherry
2 tbsp sugar to taste
250 ml whipped cream
1/2 tsp vanilla
1/2 cup crushed almonds
1 whole almond
1 marzipan pig
Recipe
Bring rice, milk and salt to a boil at medium heat. Turn to low and cook for 1/2 hour uncovered stirring occasionally. Let stand and cool completely before adding whipped cream. Add remaining ingredients. Don't forget the whole Almond!
Essay
Rice Pudding is a Danish Christmas tradition that has been passed down in my Mom's family for generations. Rice pudding is served for dessert on Christmas Eve. Whoever finds the whole almond in their bowl of rice pudding wins the marzipan pig. The person usually keeps the almond hidden until everybody is done his or her pudding. Sometimes if my Mom makes too much pudding everyone has to have a second helping so we can find the whole almond. That's hard for some people who don't really like it that much. I like the rice pudding that my Mom makes because it tastes good and it's fun to see who gets the almond.
Some families especially the children, eat rice pudding on the 23rd of December, which is known as little Christmas Eve. The children save a little of the pudding for the nisse (Christmas elf) and put it in a bowl under their beds when they go to sleep. As soon as they wake the next morning, the first thing they do is look to see if the nisse has eaten the rice pudding out of the bowl. If he hasn't, they will get no presents!!
I have not won the marzipan pig and neither has my Mom and she has been eating rice pudding for 40 years! Sometimes if an adult is sitting beside you at dinner and gets the whole almond they will give it to you. My friend Ben Mclean from Pemberton who shares Christmas dinner with us decided we should play a trick this year. We cracked whole Almonds from the nut bowl and when it was time to show the almond he showed his, which surprised Don, who had the real one. We thought that we were pretty tricky! It's fun to have special family traditions at Christmas and other holidays. It connects us to our ancestors and their cultures, which makes a family strong.

Essay
I like Italian food. One of my favorite dishes is Spaghetti alla carbonara. It is pronounced [kah-boh-NAH-rah]. The people of Rome claim to have invented this tasty, simple, creamy pasta recipe, although the true origin is uncertain. "alla carbonara" means, "in the style of coal miners". It was a popular meal among the coal mining families in the province of Umbria before spreading to the general public. Some say the name comes from the black pepper sprinkled on top because it looks like coal dust or charcoal. Others believe it was created as a way to use the bacon and eggs bought on the black market from American forces during World War II. No one knows for sure the original beginnings but there are many delicious variations today. I have tried several different Carbonara's both in Canada and Italy, but my all time favorite is my dad's.

WONDERFUL WORLD OF WHISTLER Hi, my name is Cassidy. I live in Whistler, B.C. The recipe I chose is one of my favorites, and if you try it I hope you will like it too. The school I go to is Myrtle Philip Elementary School. To be honest, I just moved to Whistler in the summer of 2002, but I love it here. A friend gave the chicken chips recipe to my mom. There is not a lot of history behind it but it's sooo yummy. My mom likes to make this recipe when she is in a hurry because it is very easy.
At my home in Whistler I have a one-year-old dog named Otto. In the summer I horseback ride, but I can't ride in the winter because it gets really, really cold. This coming summer I hope I will be able to go to horse camp. I have been riding for 5 years and I love it! In Canada and Whistler lots of my friends ice skate or take dance. In the summer I go to my cottage in Gibsons. At Gibsons my friends and I swim, go boating, fishing, hiking, and our all time favorite thing to do is go out for ice cream. I hope you liked my small essay, and I hope you try my recipe for yourself.

Thick and Chewy Chocolate Chip Cookies

1/2 stick unsalted butter, softened
6 tablespoons granulated sugar
6 tablespoons packed light brown sugar
1/4-teaspoon salt
1 1/2 teaspoons vanilla extract
1 large egg
1 cup plus 2 tablespoons all-purpose flour
1/2-teaspoon baking soda
1 cup chocolate chunks or chips
1-cup nuts (optional)
Recipe
1. Preheat oven to 375 degrees F.
2. In a medium bowl, using an electric mixer beat the butter, sugars, salt, and vanilla until well combined. Beat in the egg. Scrape down the bowl using a rubber spatula and beat for a few more seconds.
3. In a small bowl, whisk together the flour and baking soda. Add the dry ingredients to the wet mixture and mix on low speed just until absorbed. Combine the chocolate chunks/chips or nuts in a small bowl and stir in the dough.
4. Shape the dough into 1 1/2- inch balls and drop them about 3 inches apart onto ungreased baking sheets. For perfectly uniform cookies, scoop the dough using a 1 1/2- inch-diameter ice-cream scoop, leveling the dough off across the top before dropping onto the baking sheets. Bake for 10 to 12 minutes, or until the edges are golden. Let it sit for 5 minutes, then transfer to wire racks to cool completely. See Artwork at end of chapter)
Essay
My name is Nellie P and I love chocolate chip cookies. Not just any chocolate chip cookies, though...cookies from this recipe that I have tested many times. I like them done just right: a little crispy on the outside, chewy on the inside, and loaded with chocolate chips! Of course, during the making of the dough, I have to try some, but at the same time, keep the rest of the family away from it! When the cookies are just about done and still in the oven, I love the smell that they give off. That smell makes me feel like I can't wait until they're all cooled off, and ready to be eaten.
Now, the only way to eat a chocolate chip cookie that has just come out of the oven and is still warm is to have it with a cold glass of milk. Making cookies in my family is a tradition, because my mom and her three sisters used to make them when they were kids, too. And my dad...he can't remember a time when he didn't like a homemade chocolate chip cookie! During the making of a batch of chocolate chip cookies, I have fun mixing all of the ingredients together, and afterwards seeing what it's like when it's all done. I have a fourteen year old sister who loves to come around the kitchen when the dough is just about ready to go into the oven, and starts to eat a little of it. Before you know it, word spreads around, and everybody in the house is slowly making the dough disappear. But fortunately, I can usually stop them, so that there's only a little gone. Another thing that I like about making cookies myself is that I usually get to pick which one I want first, which is usually the biggest one. My sister gets mad then. Whenever we have homemade chocolate chip cookies around, I feel very happy.
FOOD FACTS: ORIGINS OF CHOCOLATE
Chocolate from the cocoa plant dates back to ancient Maya and Aztec civilization in Central America who first enjoyed a spicy drink made from roasted cocoa beans called, "Chocolatl." Prior to the chocolate being part of civilization, the cocoa trees grew wild in the tropical rain forests of the Amazon basin and other areas in Central and South America for thousands of years.

Essay
Hi my name is Madelaine Isabel Louise P. but all my friends call me Maddi. I chose chocolate cake, not that it is a family recipe or a traditional one but one of our friends made it for us and then gave us the recipe. That is why it is called Diane's chocolate cake. Diane is from Paris and is very nice. She has two daughters, an 11 year old and a 7 year old. Diane's chocolate cake is very filling and goes stale very fast. My family eats it on birthdays, parties, and special occasions. This year for my birthday since it's on Easter Monday my cake is going to be shaped like a huge Easter egg with lots of different designs on it. It is going to be quite a party. Diane's chocolate cake is very rich and flavorful. A nice semi-hard crust, with an almost creamy filling, rich in moisture.
If wishes could come true then I would have chocolate every day for dessert. Some people say that chocolate cake is gross, or too chocolaty. But then other people say that chocolate cake is delicious. I think that everyone has his or her own opinion. Take me for example, I love chocolate cake and hate salt-water taffy. My mom loves salt-water taffy and loves chocolate cake. So you see people have many different tastes, some people love something that maybe their best friend hates. One persons dislikes might just be another person's favorite food.

1 small bay leaf
2 whole peppercorns
1 clove of garlic
1 1/2 teaspoons of salt

4 tablespoons of grated Parmesan cheese
1/2 cup of barley (cook separate)

In a large Dutch oven, combine the beef shanks, onion, soup greens, bay leaf, peppercorns, clove, and salt. Add the water and bring to a boil. Skim any foam. Reduce the heat to low and simmer covered 1 1/2 to 2 hours. Remove the meat and cool. Strain the broth and skim the fat. Return the broth to the pot. Clean the celery root and cut into thin sticks. Dice the meat from the beef shanks and cut the ham into thin strips. Boil the macaroni until tender in boiling salted water and drain. Bring the broth to a boil. Combine the tomato paste with 1 cup of the broth and stir until dissolved. Add to the broth in the pot along with the celery root, diced beef and the ham. Cover and cook for 15 minutes. Add the macaroni and chervil and heat through. Sprinkle with the Parmesan cheese and serve. Enjoy! This makes 8 servings.
Essay
Hello, my name is Kristi and my favorite food is my Nana's soup. It is my favorite because it tastes really good! People like to eat soup when they are sick. Sometimes they eat soup when they go camping to warm them up. People eat soup all over the world. It is very famous type of food.
When I was little my dad and I always stopped at my Nana Parker's house to visit her. We would sit at the table with our spoons and say " Nana's Soup, Nana's Soup!" She would put the soup on the table and we would all laugh. No matter what time we would get there, there would always be a bowl of "Nana's Soup" on the table. Nana's soups didn't come from a books; it came from seventy years of experience of soup making. A couple of years ago my Nana Parker died. It was very sad. But then my Nana's daughter (I call her Nana too) carried on the tradition and makes soup too! Now she is the one who we get Nana's Soup from. Every time my family goes and visits my Nana and Poppa we have one of her famous soups. I chose this recipe, or food because it is kind of like a family favorite that started with my Nana Parker. Whenever I eat one of my nana's soups it reminds me of my Nana Parker. This is a very special recipe to me.
There are many different kinds of soup. There is chicken noodle, which is also my favorite, there is vegetable soup, and there is mushroom soup and lots more. I just can't name them all. The kind I chose for my recipe is kind of like minestrone soup. It is one of my favorite soups. The minestrone soup started with my Nana Parker, then passed on to my Nana, and then passed on to me... and some day I hope I can pass it on to my kids.

My name is Koki and I am a Canadian / Japanese. I was born in North Vancouver then moved to Japan when I was 3 month old. I lived in Kyoto, Japan for 6 years. In Japan there are lots of good food. I love Sushi, Tempura Sukiyaki, Yakisoba and Donburi. There are lots more. The recipe I chose is Beef Donburi (it is called Gyu Don in Japanese) that my mother makes. There are lots of kinds of donburi you can cook. Beef Donburi, Chicken Teriyaki Donburi, Tempura Donburi, Katsu Donburi, Curry Donburi, Chirashi donburi (sashimi on top of rice), Chicken and Egg Donburi and etc.
My mother makes beef Donburi a lot because it is inexpensive to buy beef rather than fish in Whistler. You don't need much ingredient to make this dish, and it is very quick to cook. But you must use good Japanese rice for this dish other wise it does not taste the same.
There is a big Beef Donburi chain restaurant in Japan called Yoshinoya. They are very popular. When my father moved to Japan to study Japanese culture he ate Beef Donburi at Yoshinoya. My father and I think my mother's donburi is the best.

Port and Prune Plum Pie
Ingredients
4 1/2 cups quartered and pitted prune plums (about 1 3/4 lb. whole fruit)
1-cup sugar
1/4-cup quick-cooking tapioca
3 tablespoons port
3 teaspoons each grated orange peel and vanilla
1/2-teaspoon ground nutmeg
Pastry for a double crust-9 inch pie
1 large egg, lightly beaten
Recipe
In a large bowl, stir plums, sugar, tapioca, port, peel, vanilla, and nutmeg. Let stand at least 15 minutes or up to an hour for tapioca to soften; stir occasionally.
On a lightly floured board, roll half of pastry into a 12-inch circle; ease into a 9-inch pie pan. Fill with plum mixture. On floured board, roll out remaining pastry wheel or knife, cut into 8 equal strips. Arrange on top of pie in a lattice pattern. Fold bottom crust over lattice, making flush with rim of pan. Flute edge. Brush pastry (not the filling) with egg. Set pan in a foil-lined 10-by-15-inch pan (pie bubbles as it cooks). Bake in a 400 degree Fahrenheit oven until pastry is golden and filling is bubbling in center, about 1 hour. Serve wedges warm or cool. If made ahead, let cool, then cover and chill up to 2 days. Serves 6 to 8.
Essay
When my family lived in Seattle, Washington, USA, North America, we had a plum tree in our backyard. It gave us tons of plums. The plums were so delicious that raccoons would come every night and climb into the tree and just eat the plums. Even with the raccoons eating, we had too many and the plums would just spoil. So, we found a recipe for port and prune plum pie in a local cookbook. Every year, we would go out and collect plums and take them into our house. My mom would slice them into eighths and freeze them in the refrigerator. Then, she would make the pie and I would be waiting for the pie. When the pie is being made, I normally help a little bit. I also like eating a little bit of extra crust, before it is cooked. When my mother makes it, it means either that someone is coming over, or that something important is coming up, and every so often, it is simply to be nice.
It is one of my favorite pies (my favorite is apple pie) especially when my mom or someone else in my family who is an adult makes it. We like the pie so much, that we planted a plum tree at our new house to give us plums. It produces a fair amount of plums, so we can still make port and prune plum pie. When our friends come over and we have port and prune plum pie, they ask where we got the recipe (sometimes, not always). We say that one of our friends gave it to us. Sometimes they ask us if they can have the recipe. If any of you try port and prune plum pie, you might want to try it with vanilla ice cream. That's what I like.

Torins Pancake
Recipe
Dry Ingredients
2 Cups Flour
1 Tablespoon Baking Powder
1-Teaspoon Baking Soda
1-Teaspoon Salt
1-Tablespoon Sugar
Wet Ingredients
2 Eggs
_Cup Oil
2 Cups Milk
Recipe
Mix all dry ingredients together in bowl. In a separate bowl, beat 2 eggs vigorously. Mix oil and milk into eggs. Slowly add wet mixture to dry ingredients, stirring lightly. Stir just longs enough to mold together. Let sit for 2 minutes. Pre-heat fry pan or griddle. Melt butter on the grill. Once butter is lightly bubbling, pour pancake batter on the grill. Once you see light bubbles forming on the pancakes, it is time to flip.
Essay
My essay is on my mom's pancakes. To make the pancakes properly you have to follow the recipe exactly or they will come out raw, burnt, flat, or very sharp. I remember that one time I tried to make some pancakes for everybody, but I screwed up on the recipe and the pancakes turned out to be burnt to a crisp and were very sharp. But my mom fixed them. But there was only enough mix for one pancake so my little brother Willy got it. The reason I like them is because I like the taste. I think my mom made the recipe but I am not sure.
