FINCH FAMILY CHILE
Ingredients
1 pound of ground meat
2 cans of red kidney beans
2 cans of chopped tomatoes
1 minced green pepper
Minced onion
Salt and Pepper
6 tablespoons of chili powder
Recipe
1. Take 1 pound of ground meat and brown it.
2. Add 2 cans of red kidney beans.
3. Next you add 2 cans of chopped tomatoes.
4. Then you add 1 minced green pepper and 1 minced onion.
5. Add salt and pepper to taste.
6. Then put in 6 tablespoons of chili powder.
7. Let it simmer for about an hour.
Essay
Although we are not from the country in which chili originated, we love this recipe that my mom created. When my parents lived in California, they met a couple that was about the same age as them. They then became really good friends. Coincidentally, they both moved to Connecticut, where they had my sisters and their friends and I had two children of their own. We grew up together and became great friends. About the year that I was born, my parents and their California friends (the Mortons) decided that it would be fun to celebrate Cinco de Mayo, a Mexican holiday that many people (including themselves) celebrated in California. It became a tradition. We love to make chili for this festive holiday. Two years ago the Mortons moved but this didn't stop us from celebrating! We decided to drive down in an RV for 13 hours.... just to party for a weekend.

NEW YORK CHEESECAKE
Ingredients
2 eggs
1 C. milk
2 packs unflavored gelatin
2 C. of sugar
2 teaspoons of grated lemon peel
3 C. of creamed cottage cheese
2 teaspoons lemon juice
1 teaspoon of vanilla extract
1 piecrust
Recipe
Beat egg yolk with milk then in a saucepan mix sugar and gelatin. Stir milk mixture into gelatin mixture cook over medium heat until it thickens. Remove from heat and add lemon peel cool into large bowl. Then in a separate bowl, mix cottage cheese lemon juice and vanilla. Add to gelatin and milk mixture. Then take the piecrust and cut the sides off so only the circular base is sowing. Put it in a spring form pan. In a bowl with mixer at high speed, beat egg whites when fluffy spoon into the mixture. Mix the egg whites into the mixture and put in the sprigform pan. Refrigerate until firm. Serve with whipped cream on the top. (See artwork at chapter end.)
Essay
My recipe is New York Cheesecake. I lived in New York City for 9 years. And I still visit there today. Right now I live in Darien, Connecticut where I live with my brother, my mom, my grandma, my dog Frosty, and my cat Sing who I call Misha. My mom works on the Peace Diaries. Anyway, my grandma is the one in our house that does the baking (my mom and I had a bad experience when baking in 2nd grade so, we dont bake.) My grandma makes great cheesecake in all different kinds, blueberry, lemon, lime, and my favorite plain, New York style cheesecake. Who doesnt like cheesecake? All my friends love cheesecake and eat it a lot like me! Well, enough about that. I never met anyone who dislikes cheesecake; I think that there is a kind for anyone! Although it may be a bit fatty because it is so thick, there is a flavor for anyone. If you like sweet food I think you would like a berry cheesecake, if you like sour foods, try citrus cheese cake if you like plain foods try this New York cheesecake. But, when I go to New York City, I dont just eat cheesecake I visit my dad or I shop! I love shopping in New York. There arent any malls in the city because there are so many stores scattered through out the city. I also love Chinatown, if you havent been there, I highly recommend going there. You can learn about Chinese culture and visit exotic shops. I also like the food there, but they dont have cheesecake. You can go next door to Little Italy for your dessert. My recipe is New York Cheesecake.

BARBECUE
Ingredients
3 1/2 pound boneless rump roast
2 medium onions
1 1/2 cups coca-cola
1/8 cup worcestshire sauce
1/4 cup soy sauce
1 Tablespoon white vinegar
2 cloves garlic, peeled
and halved
2 beef bullion cubes (or 1 Knorr cube = 2 small cubes)
1 teaspoon dry mustard or 1
Tablespoon Dijon
1-teaspoon chili powder
1/2-teaspoon cayenne pepper
Sesame Seed Sandwich Buns
Texas Pete Hot Sauce
BBQ Sauce:
Stubbs Hot BBQ Sauce
2 Cups Cooking Juices from BBQ
Recipe
Place roast, fat side up in a large casserole. Combine marinade ingredients and pour over roast. Place lid on casserole. Bake casserole at 250 degrees for 7 hours or until roast is fork tender. Remove roast from marinade and place in a large baking dish. Trim and discard fat from the top of the roast and shred roast using a fork. In a large 4-cup measuring cup, pour 2 cups of strained cooking juices and mix with 1-2 cups of Stubbs BBQ sauce. Pour over shredded meat and mix to taste. BBQ should be very moist. If too dry, add more strained cooking juices. Adjust seasonings.
Reheat BBQ and serve on warmed sesame seed buns with Texas Pete Hot Sauce.
Essay
When you look at barbecue what do you see? Many just see a lump of meat on some pieces of bread, but when I look at barbecue, it brings back many memories. It might sound silly, but it's true. I was born a Southern girl. I lived in North Carolina till I was around 6 months old and then my mom, dad, and I moved to Connecticut. Now we live in a big house in Connecticut and I finally have three siblings (two boys one girl). My dad's parents live in Florida where the days are nice and warm and it hardly ever snows there, while it snows every winter and it never really gets very warm (accept for occasional summer days). My Aunt Kate visits sometimes, but when she visits in the winter she is amazed by all the snow that we get! She said that the first snow that she saw in person was when she was 13 on vacation up North. My granddad is from Ohio, which is up north, so I'm sure he has seen lots of snow! My dad said that it only snowed twice in the time that he lived in Florida. One time it snowed when he was in high school. It was during school when all of a sudden it started to snow just a light dusting and all of the kids ran outside and started to dance in the snow. They must have thought that it was like a miracle. When my grandparents came in March, my grandma wore her fur coat while everybody else was just wearing there very light jackets because it was starting to become warm with spring arriving.
The opposite thing happens to us when we are going down to Florida. We always comment on why it's so hot (because we mainly visit in the summer which can really be a scorcher!). My grandma usually just smiles and says, "Honey you haven't seen anything until you see how hot it can really get!"
It may be hot in Florida, but it still rains almost everyday. Once, my grandmothers neighbors came to the door and wanted her to buy some wrapping paper for his school. At first it looked like a sprinkler was going off in the front, but then we realized it was raining. We looked in the back, and granddad was playing baseball in the back with my brother, Will. They were staying dry. It was raining in the front, and not in the back! Now that was something that you couldnt see in Connecticut! I could tell you many stories about what I remember from the south, but we would be sitting here all day, so for now, I'll say, "Goodbye."

BROILED FLOUNDER
Recipe
1. Youll need about 1 pound of fresh flounder fillets.
2. Pre-heat the oven; it should be very hot when it is time to cook.
3. Wash the fish carefully
4. Now make sure that the broiling pan is well greased.
5. If you want extra flavor sprinkle salt, pepper, and paprika before placing in the oven.
6. Broil from 4 to 5 minutes.
7. When finished, sprinkle some lemon juice on the fish if you like.
8. Enjoy!
Essay
My name is Ryan Hayes I am 7 years old. My favorite food is fish, I especially like flounder. I think that it is very tasty and it is good for you. You get as much protein in flounder as you get in beef and pork. I love to fish and once I caught a flounder and even a sand shark! My sister doesnt like to fish but she likes tuna roll sushi (But I prefer my fish cooked!). I like my flounder broiled, and Im sure that youll love it to! Probably the reason that I like fish so much is that my grandpa has a nice, big, boat that we go fishing on or we can ride to Fire Island and go fishing off the docks.
